21 is the number assigned to this variety (cultivar) of the Camellia Sinensis tea plant. Along with Red Jade is another tea created by TRES, the Taiwanese institute watching over the quality and development of tea in Taiwan. Red/Black Tea Rhyme, HongYun 紅韻.
HongYun is an hybrid from the crossing of Indian Assam variety and Chinese tea plant original from Anhui. This gives it a very unique profile. The Indian heritage gives it the aroma and a great body, while the Chinese part provides the delicate fruity flavor and sweetness. After a lot of trial and error and many years this tea was considered ready to cultivate publicly. A tea that will make you love black tea again, but remember that in Chinese culture it is called red tea.
There is something special about this tea. Yun 韻 is the term used in Chinese to refer to the aftertaste the tea leaves in the throat once ingested. There are teas with a clean and clear finish, but Red Rhyme is made in a way that you won’t forget it for a while. Picked in the Sun Moon Lake area where the best conditions for Taiwanese new variety are developed recently. It has been aged from a minimum of 6 months to refine the flavor that show love and care in the production. It can be aged even further, for that remember to store it in a place without odors, light and well closed, with less air as possible. Not only will it not lose flavor but it will continue to gain character.
If you will use it Gongfu style I recommend you not rinsing it, this tea extract very fast and you would be discarding some precious taste.
